If you would like to make a dish that will wow your guests or family then this is the dish for you. The saltiness of the feta cheese mixed with the creamy avocado, and the crunch from the pine nuts with the juicy shrimp is like an explosion of favor in your mouth. Healthy and delicious. It will have everyone coming back for more. (The term “colossal shrimp” means that there are 15 shrimp or under per pound.)
Ingredients:
- 8 colossal shrimp (peeled and deveined)
- 1 tbsp of basting oil
- 6 tsp. (1/8 cup) Feta cheese
- 1 lg. avocado (diced)
- 1/2 tsp. lemon juice
- 1/8 tsp. pepper
- 1/4 cup pine nuts (toasted)

Tips:
If you have guests coming, you can stuff the shrimp ahead of time and keep refrigerated until ready to bake. While the shrimp is baking make the avocado mixture.
To toast pine nuts just place them in single layer on a frying pan. Over medium heat, stir consistently ’till the nuts are lightly golden. Immediately transfer on a clean plate or paper towel to cool. Place in an air tight container. Can be stored for 1 month in the refrigerator or 9 months in the freezer.
